WINE 1Domaine Ferret Pouilly Fuisse - France. Half the wine is fermented in enamelled tanks and half in used oak barrels. Subtle notes include minerals, yellow fruits, flowers, fresh hazelnuts and spices, with an intense finish and bright structure.
WINE 2Resonance Pinot Noir - Willamette Valley, Oregon. The nose is very fresh and fruity, with a lot of red (strawberry, raspberry) and black (wild cherry, blackberry) fruits, enhanced by subtle floral and spicy aromas. Elegance and harmony describe precisely the palate. Tannins are present and fine, while the acidity brings a nice freshness.
WINE 3Mullan Road Red Blend (Dennis Cakebread) - Walla Walla Valley, Washington. Composed of 51% Cabernet Sauvignon, 29% Merlot and 20% Cabernet Franc which spent 18 months in French and American oak barrels, 34% new. It begins with inviting aromas of red and dark currants, which combine with spices, tobacco and forest herbs. Medium to full-bodied with a wonderfully velvety texture and nicely polished tannins framing the red and dark fruits.
WINE 4Cakebread Cabernet Napa Valley, California. Deep shades of purple and rich dark-red hues, signal that this is a quintessential Napa Valley Cabernet Sauvignon. Aromas of ripe blackberry, boysenberry, dark chocolate and notes of oak precede balanced acidity and firm tannins. With forward fruit and welcome mineral undertones.
WINE 5Cabreo Il Borgo - Tuscany. Opens to a rich, dark garnet appearance with austere fruit flavours. Following a few vigorous swirls of the glass, the wine opens up to soft cherry and blackberry aromas with mellow textural richness. Il Borgo represents a blend of 70% Sangiovese and 30% Cabernet Sauvignon.
WINE 6Guidalberto - Tuscany. This blend of Cabernet Sauvignon (60%) and Merlot (40%) opens with aromas of blackcurrant, star anise and a whiff of incense. It's savory and elegant, doling out flavours of dried black cherry, raspberry jam, white pepper and licorice. Fine-grained tannins and fresh acidity provide balanced support.
